If an apple has a climax, it's Paradis Sierra. It is the best when it looks the best, when it is bright red hanging on the tree, as a beauty among the apples. The apple variety Paradis Sierra is an autumn apple – and you do nothing wrong by emphasising that exactly. Although this means, in the case of Sierra, that it does not have a very long shelf life, it also means that it is simply good in autumn. Its juicy bite, its tangy texture that unfolds on the palate is very fruity, almost tingly, but then also the sweetness that comes into play before the aroma starts to spread, which can only be described as “apply”.
Paradis Sierra is resistant to scab, just like all Paradis varieties. It has moderately vigorous growth and almost always already bears fruit in the second year after planting. It therefore has all the required qualities of a modern garden apple. Its texture can best be compared the best with the commercial variety Elstar, but Paradis Sierra has more sugar and more flavour. The flavour is similar to a well-matured Cox apple than an Elstar. Compared to the conventional varieties, Paradis Sierra has an advantage due to the scab resistant, the fast and regular yield and also the beautiful structure of the tree. But what distinguishes Paradis Sierra from all other varieties, is its seasonality, its autumn quality that makes it incomparable.
I can perhaps best illustrate this with a story that can bear the following title: The second life of the apple Paradis Sierra: We had discovered in our breeding fields another, similar-looking, and also similar tasting apple, number A889. A889 is much more efficient than Sierra and so we decided to replace Sierra in our range by A889. It is a lengthy process because you first have to propagate the new variety, increase production, and of course at the same time phase out the old variety. This went well until the autumn before exactly the year that Sierra should die in an unnatural variety death, namely simply no longer would be available...At the Harvest and Autumn Festival at the Ippenburg Castle, I had the last Sierra apples with me and they were extraordinarily well liked by the visitors. I also could not get enough of their shape, nice size, the bright colour and the intense aroma. It was autumn and the variety embodied the apple autumn. Already at noon I relented, phoned home and asked our manager, to propagate as Paradis Sierra as soon as possible again. For now, at the time of the autumn joy of harvest, there is simply nothing better and more beautiful. This is how our apple Paradis Sierra was granted a second life.
