Product information "Oca Tubered"

Harvest: As late as possible, November/December
Root crops: Elongated, cone-like tubers, convolute, bright red
Flavour: When enjoyed fresh, the sourness is noticeable, which is rare for a vegetable; it's the same oxalic acid, which also makes rhubarb "sour"; however, it is a slightly lemon-like acidity, which can be very pleasant and different when enjoyed fresh along with salt and pepper or a dip; the red varieties sometimes have a slightly earthy aftertaste, which goes away during baking/cooking
Growth: 30 - 40 cm high, covers 0.5 - 0.7m²; the red varieties are more sensitive to the hot summer and adjust their growth in order to then start again in the second half of August; the shoots are attractively red-coloured and have a good ornamental value
Use: One of the best varieties baked as chips, with a fruity, sour-sweet aroma; the red skin colour remains, which is otherwise lost during cooking
 
This is a new root crop that the Incas already knew about. The growth is very similar and similarly attractive like the lucky clover; it forms beautiful, red, pink or yellow tubers that are very versatile in autumn. This was our favourite amongst our cooking and tasting tests: chips from the oven with a little olive oil, a heavenly dining experience: unlike potatoes or sweet potatoes, oca can be enjoyed fresh as a snack (with salt, pepper or a dip).
