Plants per square meter: 3 piecesHarvest: As late as possible, Nov./Dec.; protect the shoots in autumn before the frost
Root crops: Bright yellow; 3-8 cm long, cone-like; the skin colour is lost during cooking; however, the flesh has a beautiful, yellow colour when cooked and especially baked
Flavour: The best variety when eaten fresh, the sourness is somewhat moderate and there is no earthy aftertaste
Growth: 40 cm high and covers 1 m²; Tuberello seems to respond less to the heat in the summer, thus achieving a better coverage than 'Tubered' and 'Tuberosa'
Use: Fresh enjoyment and baking / cooking; also recommended as a purée
This is a new root crop that the Incas already knew about. The growth is very similar and similarly attractive like the lucky clover; it forms beautiful, red, pink or yellow tubers that are very versatile in autumn. This was our favourite amongst our cooking and tasting tests: chips from the oven with a little olive oil, a heavenly dining experience: unlike potatoes or sweet potatoes, oca can be enjoyed fresh as a snack (with salt, pepper or a dip).
